seattle steam
a medium-bodied west-coast lager with floral notes
- 6.6 lbs pale malt extract
- .75 lbs crystal 40L malt
- .25 maltodextrin powder
- 1 oz northern brewer's hops for 60 minutes
- 1 oz northern brewer's hops for 15 minutes
- california lager yeast
Ferment for 2 weeks at 55-60 degrees F
pumpkin ale #2
don't listen to them - use real pumpkin!
- 5.5lbs pale malt extract
- 1.5 lbs 2 row barley
- 1 lbs german vienna barley
- 1 medium pumpkin - cubed and roasted - in for 60 minutes
- zest from one whole orange for 20 minutes
- 1.5 teaspoons pumpkin spice for 5 minutes
- .5 teaspoons vanilla for 5 minutes
- .5 oz cascade hops for 60 minutes
- .5 oz cascade hops for 45 minutes
- american ale yeast (Wyeast 1056)
Lots of literature will tell you using real pumpkin doesn't add
any flavor, but we think it does. Preparing, cubing, and roasting
the pumpkin adds about an hour to your brewing timeframe.

- 7 lbs pale malt extract
- 2 oz roasted barley
- 16 oz 20L crystal malt
- 10 oz light munich malt
- 2 oz northern brewer's hops for 60 minutes
- 1 oz domestic mt. hood hops for 30 minutesamerican ale yeast (Wyeast 1056)
tomahawk dark hop
not for wussies - very dark hoppy ale
- 3.3 lbs pale malt extract
- 3.3 lbs dark malt extract
- 8 oz 40L crystal malt
- 10 oz chocolate malt
- 2 oz columbus hops for 60 minutes
- 2 oz cascade hops for 20 minutes
- 1 teaspoon irish moss for 20 minutes
- 1 oz cascade hops during fermentation for dry-hopping
- american ale yeast (Wyeast 1056)
